When you are on your creative family beach vacations, splurge a bit. Here's a list of desserts that are popular in various countries around the world.

Crème brûlée (France)
A culinary icon consisting of a custard base topped with a hard layer of caramel. This hard crust is created by burning sugar under intense heat, often via a blowtorch.

Creme de papaya (Brazil)
Consists primarily of papaya blended with vanilla ice cream. After placing a serving into a small dish, crème de cassis or a non-alcoholic blackcurrent syrup are often added. This dessert was a popular culinary fad in Brazil in the mid-90's.

Fried Ice Cream (Mexico)
Commonly made by taking a scoop of ice cream that has been chilled way below the freezing temperature, rolling it in an egg, than then rolling it again in cornflakes or cookie crumbs. At this point it is briefly deep fried. The ice cream will melt on the inside, but the outside will be crispy due to the flash frying method. It is often served with a sprinkling of cinnamon and sugar.

Pastel de Nata (Portugal)
A small cream tart, popular in the pastry shops and cafés of Portugal. Once they are removed from the oven they are often sprinkled with cinnamon or powdered sugar while they are still warm.

Pavlova (Australia)
A meringue that is made by beating egg whites to a very stiff consistency before adding other ingredients, and baking it in the oven. It was named in honor of the Russian ballet dancer, Anna Pavlova, and is crispy on the outside, but light and fluffy once you get past the crust. It is frequently eaten at parties or holidays, such as Christmas dinner.
